Taragon Chicken Recipe – How to Make Petite blanquette de poulet à l’estragon

In this episode of “What’s Cooking?” Michael travels to two places at once: Paris, France and Bellevue, Washington, where Allrecipes home cook, Muriel, teaches us how to make her authentic and delicious Petite blanquette de poulet à l’estragon!

This Petite blanquette de poulet à l’estragon (Taragon Chicken) dish has its humble beginnings from a similar French dish made of poor cuts of Veal. Instead of veal, however, more readily available, and less expensive, chicken thighs have been substituted. We start by cooking the chicken and vegetables, such as carrtots and mushrooms. Muriel then shows us how to make a creme freche sauce. She will be the first to tell you that she is not a chef, but an ordinary cook making French favorites. She may not be a chef, but she is anything but ordinary!
